Stuffed Jalapenos

There are plenty of recipes out there for stuffed jalapenos. I just like to think mine is better. There really isn’t any measuring here which makes it easy and you can make it your own. I mean, you can’t go wrong putting a mixture into a jalapeno and wrapping it with bacon! I like to make a mixture of whipped cream cheese, prepared pulled pork, and shredded cheddar. In the recipe below I’ll put “measurements”. By “measurements” I mean “guesstimates”. The fun part of recipes is making them your own and adjusting them to your taste. These are delicious and disappear very quickly so make sure to sneak some before putting them out for everyone else. As always, please feel free to comment!!

12 Jalapeno peppers sliced lengthwise

3/4 cup whipped or room temperature cream cheese

1/2 cup shredded cheddar

1 cup of prepared pulled pork in BBQ sauce

BBQ sauce to taste

1 LB of regular cut bacon

BBQ Rub

Mix the cream cheese, shredded cheese, and pulled pork in a mixing bowl. At this point you will want to adjust it to your taste. I usually add a little more BBQ sauce and some of the rub. Then, trim the stem of peppers and slice the jalapeno’s lengthwise. Fill the jalapeno’s with the mixture and wrap with half a slice of bacon. Set your smoker to 250 degrees and smoke the wrapped peppers for 1 hour or until bacon is done to your liking.
